Bacon & Pea soup anyone!

Hi Folks….Well here it is the recipe:
Melt 25g unsalted butter in a pan cut or chop 8 rashers of smoked back bacon with 2 x leeks and 1 clove of Garlic. cook for about 5-7 mins till soft.
Add 500g fresh garden peas, or frozen and add 1.2l chicken stock, bring to boil then simmer for 20-25 mins, then remove from heat and blitz, pulp, chop blend with your mix thingy! then garnish with a little cream or chopped chives.

). It would work with veg stock, I think. I’ve never used frozen peas in soup, must try that.
Rolls look great too. For your next birthday you should get a bread maker, it’s just brilliant. Your loaf could be baking while you make the soup

Jill…..Veg stock will work just as well, we have a bread maker well Sarah has ….I cant get on with it much the tin is to small plus it bakes with the blade left in the bottom?
For dessert we just had Cornish cream Ice cream YUM

There is one small thing I learnt at the knee of a local lad a few weeks ago - if sweating your veggies on a low heat, cover with a cartouche (no I hadn’t heard of it either) which is two greased layers of greaseproof paper (cut to fit) + the pan lid. It concentrates the flavour wonderfully. I didn’t believe it until I tried it.

Jillon 17 Mar 2009 at 4:45 pm 7Blade in the bottom is a pain, Fred, but you have to poke it out sometimes. I find a spoon handle useful. And anyone who takes that the wrong way has only themselves to blame
I’m casting around the contents of my fridge and freezer in my mind to see if I could produce something similar tonight! Sans cartouche, though.

we also have a Farmers Market-Falkirk is very rural just outside of the actual town- so long as you don’t head towards Grangemouth..
